Red White and Blue Mixed Berry Ice Cream Cake
Serves 6 to 8
Ingredients:
For the berry sauce:
• 1 1/2 cups mixed berries
• 1 Tbsp maple syrup
• 1 tsp lemon juice
For the cake:
• 1 cup graham cracker crumbs
• 6 Tbsp butter, melted
• 1 pint vanilla ice cream, softened
• Whipped topping
• Fresh blueberries, for decorating
• Fresh strawberries, sliced, for decorating
Instructions:
1. Make the berry sauce: Add berries, maple syrup, and lemon juice to a saucepan. Heat to a simmer.
2. Simmer, stirring occasionally, about 10 minutes, until berries soften. Set aside and cool completely.
3. Mix graham cracker crumbs and melted butter. Press firmly into the bottom of a 9x6 inch casserole dish.
4. Spread softened vanilla ice cream over the crust in an even layer.
5. Spoon over the cooled berry sauce, then top with whipped topping.
6. Decorate with fresh blueberries and sliced strawberries.
7. Freeze until firm, at least 2 hours. Slice and enjoy!
