Firm tofu: 1 / 2 small (about 100g)
Dashi stock: 2 cups (400ml)
Miso: 50g (2 ~ 3 tablespoons ※ Please adjust to your favorite thickness)

① Cut the ingredients (preparation)
Thinly slice the new onion: Peel the onion, cut off the root, and then slice it thinly from the end along the fiber.
Cut the tofu into bite-sized pieces: Cut the tofu into bite-sized pieces, such as 1.5 cm to 2 cm square dices.
② Boil onions in soup stock
Put the dashi stock and sliced new onions in a pot.
Turn on the heat and set the heat to medium.
Leave to simmer for 3-4 minutes, until the onion becomes soft and the sweetness melts into the broth.
③ Add tofu and warm
Once the onions are cooked, add the tofu to the pot.
Wait a little while until the tofu starts to boil again so that it warms to the core.
④ Melt the miso and finish
When the tofu is warm, turn off the heat (or reduce the heat to low).
Using miso koshi, dissolve the miso in the soup.
When the miso is completely melted, serve it in a bowl and it's done.
