Ingredients

For the filling

2 cups cooked chicken breast, shredded

2 cups cabbage, finely shredded

1 medium carrot, julienned

1 small bell pepper, thinly sliced

2 green onions, chopped

2 cloves garlic, minced

1 tsp grated ginger

2 tbsp soy sauce

1 tbsp oyster sauce (optional)

1 tsp sesame oil

1 tbsp vegetable oil

Salt and black pepper to taste

For rolling

12–15 spring roll wrappers

2 tbsp flour mixed with 3 tbsp water (for sealing)

For frying

Vegetable oil for deep frying

Instructions

Cook the filling: Heat the vegetable oil in a skillet. Sauté the garlic and ginger until fragrant. Add the chicken, cabbage, carrot, bell pepper, and green onions. Stir-fry for 4–5 minutes. Add the soy sauce, oyster sauce, sesame oil, salt, and pepper. Cook until the vegetables are just tender, then let the filling cool completely.

Prepare the wrappers: Place a spring roll wrapper on a clean surface with one corner facing you.

Fill and roll: Spoon 2–3 tablespoons of the cooled filling near the bottom corner. Fold the bottom over the filling, fold in the sides, roll tightly, and seal the edge with the flour paste.

Heat the oil: Heat vegetable oil to 350°F (175°C) in a deep pan or fryer.

Fry: Fry the spring rolls in batches for 4–6 minutes, turning occasionally, until golden brown and crispy. Drain on paper towels.

Serve: Arrange on a serving plate with sweet chili sauce or your favorite dipping sauce.
