POTs Breakfast✨
👩🏻 Spam and Eggs 🍳
What you’ll need:
🥚Eggs: 2 Scrambled
🌺SPAM: Any flavor works! I love the maple. It is super high in sodium but not harsh on your stomach!
🍙Nori: AKA big sheets of seaweed. I found these at my local Asian Market. Although most stores sell smaller pieces that will work!
🫐 Fruit on the side! Any one works, I loveeeee blue berries with some honey + brown sugar.
🌶️I pair it with a sweet Taiwanese hot sauce that fits perfect with the maple flavors.
📝Steps: Scramble your eggs and fry your spam to your liking. Stack SPAM slices and rice on Nori lying flat. Then wrap the Nori, similar to a burrito.
My stomach was extra upset this morning so I opted for some eggs and spam on the side. Remember to accommodate your own needs!
🍳This is one of my favorite breakfasts at the moment. The saltiness of the Spam starts of my sodium needs for the day. And the sweetness of the berries evens it out.

Finding the right breakfast can truly set the tone for your day, especially when you're managing a chronic condition like POTS. While many people search for hearty options like a 'potato breakfast recipe', my journey led me to discover the incredible benefits of a 'spam musubi rice bowl' style meal. It's not just delicious; it's a strategic choice for high sodium intake, which is often crucial for POTS management. Let's talk about why a Spam Musubi-inspired breakfast is such a winner. First, the star ingredient, Spam, especially the maple-flavored Spam mentioned in my recipe, is naturally high in sodium. This is a huge plus for those of us with Postural Orthostatic Tachycardia Syndrome who need to maintain adequate salt levels. The savory, slightly sweet taste of maple Spam pairs beautifully with scrambled eggs, creating a satisfying and flavorful base for your morning meal. And for those days when wrapping a traditional musubi feels like too much effort, turning it into a 'Spam Musubi rice bowl' is a brilliant hack. Just layer your rice, fried Spam, and scrambled eggs in a bowl, crumble some nori sheets over the top, and you're good to go! It delivers all the flavor with less fuss. Beyond the sodium, this breakfast is incredibly versatile and can be customized to your energy levels. On days when my stomach is a bit upset, I might opt for the deconstructed version, keeping the eggs and Spam separate. Adding a side of fresh fruit, like blueberries with a drizzle of honey and brown sugar, not only provides essential nutrients but also balances the saltiness with a lovely sweetness. And don't forget the hot sauce! A sweet Taiwanese hot sauce, as I enjoy, can add that perfect kick and extra layer of flavor that really elevates the dish. For those looking for other quick, high-sodium breakfast ideas that aren't potato-based, consider these options: savory oatmeal topped with soy sauce, a fried egg, and a sprinkle of everything bagel seasoning; cottage cheese with olives and high-sodium crackers; or even a quick tuna melt on whole-wheat toast with plenty of pickles. The goal is to find easy-to-prepare, nutrient-dense, and sodium-rich meals that support your body without overwhelming your system on a low-spoon day. Ultimately, the best breakfast is one that meets your personal needs, tastes great, and helps you feel your best. This Spam Musubi-inspired breakfast has become a cherished part of my routine, providing the energy and sodium I need to face the day. I encourage you to experiment and find what works for you!
