CHYNA CHRONICLES
Ingredients:
- 4 large baking potatoes
- 1 cup cooked shrimp, chopped
- 1 cup cooked crab meat
- 1/2 cup sour cream
- 1/4 cup butter
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup milk
- Salt and pepper to taste
- Paprika for garnish

Instructions:
1. Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the potatoes clean, then pierce them a few times with a fork. Place them directly on the oven rack and bake for about 1 hour, or until they are tender when pierced with a fork.
2. Prepare the Filling: Once the potatoes are baked, let them cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving a small border of potato in the skin. Place the scooped-out potato in a large bowl.
3. Mix the Ingredients: Add the butter, sour cream, milk, salt, and pepper to the bowl with the potato insides. Mash until smooth. Stir in the shrimp, crab meat, cheddar cheese, and green onions.
4. Fill the Potatoes: Spoon the seafood mixture back into the potato skins, mounding it slightly. Place the filled potatoes on a baking sheet.
5. Bake Again: Reduce the oven temperature to 375°F (190°C). Bake the filled potatoes for another 15-20 minutes, or until the tops are golden and the filling is heated through.
6. Garnish and Serve: Sprinkle a little paprika and green onion on top for garnish. Serve hot and enjoy!
