SOURDOUGH STARTER MAINTENANCE
I only bake about once a week and most days, my sourdough starter (to be named hehe) sits in the fridge! but when I ready to bake:
- discard half and feed it once or twice in a 1:1 ratio of flour:water (I usually do about 30g)
- I feed it typically 2-3 times before I bake
your starter can sit in the fridge approximately 2-3 weeks without a feeding! and if you don't plan to bake, I'd feed it minimum once every 2-3 weeks and place it back in the fridge :)
Maintaining a healthy sourdough starter is crucial for successful baking. To keep your starter active, it's ideal to feed it regularly, typically at a 1:1 ratio of flour to water. If you bake once a week, discard half of your starter and feed it 2-3 times before using it. If stored in the fridge, your starter can survive for 2-3 weeks without feeding. However, it’s recommended to feed it at least once during that period if you plan to let it sit longer. For those who enjoy a low-maintenance baking schedule, consider storing your starter in the refrigerator. When you are ready to bake, bring it back to room temperature and follow the feeding schedule you've established. This not only ensures the health of your starter but also enhances the flavor of your bread due to the fermentation process. Keep your sourdough starter vibrant and active, and you'll enjoy the best results in your baking endeavors. Happy sourdough baking!

Do you put a tight lid on it when you put it in the fridge?
