Easy strawberry cheesecake danish 🍓

Ingredients:

1 package of puff pastry, 2-3 strawberries, 1 egg, 8 oz of cream cheese, lemon juice or zest, sugar to taste.

Steps:

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone baking sheet.

On a lightly floured surface roll out thawed puff pastry into small rectangles.

With a knife, score ½” border around the edge of each piece of puff pastry. Use a fork to make five or six pricks into the dough within the border of each piece.

In a bowl, stir together softened cream cheese, sugar, vanilla and lemon zest. Spoon about 2-3 tablespoons of mixture into the middle of each piece of dough and spread the cream cheese mixture around evenly, ensuring the mix stays within the borders.

In a small dish, mix together the egg and water to create an egg wash and use a pastry brush to brush it on the border of each danish.

Bake for 20 minutes, on the middle rack and rotate the baking sheet or sheet pan half way through baking.

Remove from baking sheet and cool on a wire rack. Cut 2-3 strawberries into thin slices and shape them using a small heart shaped cookie cutter. Place the strawberry hearts onto the center of the danishes.

For instance, mixing in a touch of fresh lemon juice or zest—as suggested in the recipe—adds a lovely tang that balances the creamy sweetness of the filling. You can also customize the sugar amount depending on your preference for sweetness. When shaping the puff pastry, scoring the borders and pricking the center helps the danish bake evenly and prevents puffing up unwanted areas, ensuring that the cream cheese stays beautifully contained. Using an egg wash on the borders not only gives a glossy golden finish but also helps seal the edges. For the strawberry hearts on top, using a small heart-shaped cookie cutter is a charming way to decorate your desserts and impress guests. If fresh strawberries are out of season, frozen strawberries can be thawed and patted dry, or you could try other fruits like raspberries or blueberries for variety. Additionally, cooling the danishes on a wire rack prevents sogginess, maintaining a crisp pastry base that contrasts nicely with the smooth cream cheese and juicy strawberry topping. This dessert fits well into various occasions, from casual breakfasts to elegant tea parties or as a delightful finish to dinner gatherings. Plus, its simple ingredients and step-by-step process make it an excellent choice for bakers of any skill level wanting to create an attractive and tasty treat.
