Creole Pasta

Ingredients

1 Smoked turkey sausage (sliced)

1 cup heavy cream (more if you want extra sauce)

3 pieces cooked bacon (chopped)

1 TBS Creole seasoning

3/4 cup parmesan cheese

1 pound fettuccine pasta

1 TBS tomato paste

1/4 cup chopped fresh parsley

1 tsp smoked paprika

1 tbs garlic powder

1 tbs onion powder

1/2 tsp salt and pepper

3 tbs avocado or olive oil

1/2 diced red & green bell pepper (diced)

2 tbs butter

- In a large pan over medium heat, add 2 tbs oil, sausage and cook for 5 minutes. While sausage is cooking, start dicing and chopping your vegetables. Add bacon to the oven or cook on the stove until the bacon is crispy. When sausage is done, remove from the pan and set to the side.

In the same skillet, add bell peppers, 1 tbs oil, 2 tbs butter and sautee for 2 minutes. Add the heavy cream to the vegetables. Season with your creole seasoning, smoked paprika, garlic and onion powder. Allow heavy cream mixture to thicken up. Add your parmesan cheese, chopped parsley and stir together. Simmer on low heat to reduce to desired consistency. Add salt and pepper. Feel free to add more seasoning if needed.

Boil your pasta like the directions on the box. Reserve 1/2 cup of pasta water, drain and add to the sauce. If too thick, add your 1/2 cup of pasta water a bit at a time to loosen it up. Add the sausage and pasta back to the sauce. Plate the pasta and garnish with bacon, parmesan cheese and more freshly chopped parsley. Serve and enjoy!
