Nothing is more comforting than homemade chili 🌶️ 🫘🤤

1 lb lean ground beef

1 yellow onion, diced

4-5 garlic cloves, minced

1 tsp paprika

1 tsp cumin

1-2 tbsp worchestire

2-3 tbsp coconut aminos or tamari

1/2 cup Bella mushrooms, cleaned and diced

1-2 carrots, peeled and diced

1 can (14.5 oz) tomato sauce or crushed tomatoes

1 can red kidney beans, drained and rinsed

1 ½ cups beef broth or 1-2 tbsp better than bouillon beef

Diced Jalapeño, optional

salt and black pepper to taste

Water, fill to cover the beans

Handfuls of chopped kale (for extra greens)

In a large pot, add neutral oil and sauté onion, garlic, beef and spices. Then add carrots and mushrooms. Once browned, add tomato sauce, beef bouillon or stock, beans and kale (last, once boiling). Reduce to simmer and cook until the chili thickens.
