Healthy snickers bark w/ a strawberry twist 🍓🍫❤️

12-16 medjool dates, pitted

Peanut or almond butter (smooth or crunchy), if thick, warm it up a bit to have a looser consistency

Thinly sliced strawberries (patted dry) - real or freeze dried

Dark chocolate bar, melted

Flaky sea salt

Layer the medjool dates inside face up in between two parchment papers. Flatten with rolling pin or glass cup until really thin. Spread even layer of peanut butter, then thinly sliced strawberries. Freeze for about an hour until peanut butter hardens, then spread even layer of melted dark chocolate. The higher the dark chocolate %, the better it balances out the sweetness of the dates. Sprinkle flaky sea salt. Enjoy!

The medjool dates provide natural sweetness and a chewy texture that replaces refined sugar, while the combination of peanut or almond butter adds healthy fats and a creamy layer. One tip I've learned is to warm the nut butter slightly if it feels too thick, which makes spreading much easier and results in a smoother layer. Also, using thinly sliced or freeze-dried strawberries creates a lovely contrast in texture and adds a fresh, fruity note that complements the rich dark chocolate beautifully. Freezing the bark after layering the strawberries and nut butter helps the peanut butter harden nicely, making it easier to spread the melted dark chocolate on top. I prefer dark chocolate with at least 70% cocoa content because it balances the sweetness from the dates and adds a slight bitterness that is very satisfying. Sprinkling flaky sea salt on top is my favorite finishing touch. It enhances all the flavors and adds a delicate crunch that makes each bite more exciting. This dessert is surprisingly quick to make and doesn’t require any baking, so it’s perfect if you're short on time or want a healthier alternative to traditional candy bars. For those who are gluten-free or following clean-eating habits, this recipe fits perfectly, and it’s even suitable for Valentine's Day treats or any special occasion. The natural ingredients make it a nourishing choice for both kids and adults alike. Overall, this no-bake Snickers bark with a strawberry twist has become a staple in my kitchen, and I always recommend it to friends looking for a wholesome dessert that's easy to make and delicious.
