While many quick udon recipes just use soy sauce, a couple of extra ingredients transform it. I love to whisk together soy sauce (shoyu, of course!), a touch of mirin for sweetness and gloss, a tiny bit of sugar, and for that essential kick, my favorite chili sauce – sometimes Sriracha, sometimes a chili garlic paste if I'm feeling adventurous. To make it truly sticky and ensure it clings to the noodles, a small cornstarch slurry (cornstarch mixed with a bit of water) is a game-changer.
