Desert time 🫶
The inspiration for this rice pudding came from one of my favorite desserts ever: Thai sticky rice with mango. But instead of using sticky rice in this recipe, I used sushi rice, and the results are creamy and delicious. It's lightly sweetened, letting the flavor of the mangoes shine.
Ingredients:
½ cup uncooked sushi rice or short-grain rice, not rinsed
1 cup 2% milk or nondairy milk
½/ cup canned light coconut milk
3 tablespoons monk fruit sweetener or sugar
2 mangoes, cut into ½ inch thin slices
Instructions:
In a heavy-bottomed nonstick medium pot, combine the rice and 1½ cups water.
Bring to a boil over medium-high heat and cook uncovered until most of the water is evaporated and just barely skims the top of the rice, 5 to 8 minutes. Cover, reduce the heat to low, and simmer until the rice is tender, about 15 minutes. Remove from the heat and let it sit, covered, for 5 minutes.
To the rice, add the milk, coconut milk, sweetener, and ⅓ teaspoon kosher salt and stir to combine. Bring to a boil over medium-low heat, then reduce the heat to low and simmer, stirring often, until the rice pudding is thick and creamy, about 15 minutes.
Remove from the heat and spoon into four shallow bowls. Serve warm or chilled, topped with mango.#desertrecipe #ricepudding
