Having personally witnessed the impact of food insecurity, I've learned how small actions around leftovers can make a huge difference. Instead of discarding extra food, consider safe storage methods such as refrigeration or freezing to extend its life. Sharing leftovers with neighbors or local food banks can also provide valuable support to those struggling to afford meals. In communities, organizing neighborhood food-sharing initiatives has shown great success. Not only does this reduce waste, but it fosters a sense of togetherness and care. Over 5 million American seniors face food insecurity, and many suffer in silence; by repurposing leftovers thoughtfully, we contribute to alleviating this issue. Moreover, planning meals and portion sizes more carefully helps minimize uneaten food. Simple practices like labeling leftovers and creative recipes using what’s left can turn surplus food into wholesome meals. Each effort counts in transforming leftovers from waste into a resource, supporting a future where fewer people face hunger.
