You'll notice the central head becoming firm and the outer leaves looking full and vibrant green. For a cut-and-come-again harvest, you can carefully snip off the outer leaves, leaving the inner ones to continue growing. This way, you get multiple harvests from one plant! If you want the whole head, just cut it at the base. I always feel a little sad to cut it down when it looks so perfect, but the taste of truly fresh romaine makes it all worthwhile. One common issue is bolting. If your romaine starts to shoot up a central stalk, it's starting to bolt, and the leaves will become bitter. Harvesting before this happens is ideal. Planting in succession (every few weeks) also ensures a continuous supply. For those with limited space, romaine grows wonderfully in containers too, as long as they're deep enough for the roots.
