Virginia Spoon Bread Recipe

A classic, custardy cornmeal dish that’s soft, rich, and best served warm right out of the oven. ✨

Ingredients

• 1 cup cornmeal

• 1 cup boiling water

• 2 large eggs

• 1 teaspoon salt

• 1 tablespoon baking powder

• 1 cup milk, divided

• 1–2 tablespoons butter (for greasing)

Instructions

1️⃣Preheat the oven:

Place an 8-inch square baking dish or an 8-inch cast iron skillet in a cold oven. Preheat the oven to 400°F (204°C), allowing the pan to heat along with the oven.

2️⃣Prepare the cornmeal mixture:

In a mixing bowl, stir the cornmeal into the boiling water until smooth. Let it cool slightly, then beat in the eggs one at a time, mixing thoroughly after each addition. Stir in the salt.

3️⃣Mix the leavening:

In a small bowl, dissolve the baking powder in 3 tablespoons of the milk. Stir the baking powder mixture into the remaining milk, then combine with the cornmeal mixture. Stir until smooth and well blended.

4️⃣Bake the spoon bread:

Carefully remove the hot baking dish from the oven and butter it generously. Pour in the cornmeal mixture and smooth the top.

5️⃣Bake:

Return the dish to the oven and bake for 30 minutes, or until the spoon bread is golden and a toothpick inserted in the center comes out clean.

I've never had it, I love cornbread but this just doesn't sound good to me for some reason!! I just can't picture bread with that consistency and eating it with a spoon.
