✨Let’s make cozy soup for dinner 🫶🍲✨

I’ve been feeling under the weather lately due to having to euthanize my Maltipoo and having a chronic bronchitis flare up. Needless to say I was in the mood for something comforting tonight for dinner.

Per usual chicken noodle soup is my go to (especially since my bronchitis makes it hard for me to swallow at times) @Lemon8 Food.

Ingredients:

14 cups water

6 chicken thighs

Precut veggie trinity (celery, green pepper, onion)

4 Bay leaves

5-6 Thyme sprigs

5 tablespoons Chicken bouillon

1 tablespoon Adobo

1 teaspoon black pepper

2 bags Egg Noodles

2 cups Heavy Cream

3 tablespoons flour

Preparation:

-Grab a large pot and fill with 14 cups water add your chicken thighs a bring to a boil for about 5-10 minutes.

-Skim the foam (impurities) off the top.

- Add all of your seasoning and herbs cover the pot and allow to cook on medium for 30 minutes.

- Remove chicken from pot and shred. Set to the side.

- Remove thyme stems and bay leaves and discard.

-Add noodles to pot and allow to cook for 20-25 minutes.

-Add chicken back to pot.

-Mix together heavy cream and flour then stir into pot, cover and allow to cook for another 10-15 minutes in order for the soup to thicken.

-Turn off heat and serve.

... Read moreWhen it comes to comfort food, especially during times of illness or emotional stress, a warm bowl of chicken noodle soup is unbeatable. I’ve personally found that using bone-in chicken thighs not only adds a rich flavor but also infuses the broth with a nourishing depth that canned broths can’t match. Skimming the foam off the top as the soup boils is a key step to ensure clarity and a clean taste, which is especially important when you're trying to soothe a sensitive throat, like during bronchitis flare-ups. The classic trio of celery, green pepper, and onion—the veggie trinity—adds a subtle sweetness and aromatic base that perfectly balances the herbs like fresh thyme and bay leaves. I like to simmer the herbs gently to extract their essence without making the broth bitter. Using chicken bouillon intensifies the savoriness, but I recommend choosing low-sodium bouillon if you're watching your salt intake. Adding egg noodles towards the end ensures they don’t overcook and become mushy, maintaining their perfect bite. For an indulgent touch, stirring in a mixture of heavy cream and flour turns the broth creamy and smooth, giving the soup a velvety texture that feels like a hug in a bowl. From personal experience, this comforting soup not only aids recovery by being easy to swallow but also uplifts the spirit during tough days. It’s a recipe I’ve turned to repeatedly after bouts of illness or emotional down days. I also find that having nourishing homemade soup on hand encourages me to rest more, as the warmth and flavors provide a comforting distraction from discomfort. If you're looking to customize, consider adding a dash of freshly grated ginger for immune-boosting properties or some minced garlic for added flavor and health benefits. Remember, cooking and eating something made with care can be just as healing as any medicine. What comfort foods do you turn to when you’re feeling under the weather? Sharing these recipes can create a supportive community that helps us all get through difficult times together.
