✨Let’s make Beef Stew 🫶✨
As fall quickly approaches I start whipping up my favorite soup dishes. One of my favorites is a nice warm bowl of slow cooked beef stew with fresh veggies. I like to serve it with a hot or of rice and homemade cornbread @Lemon8 Food.
Ingredients:
Beef for stew
The seasonings in the picture above to your taste. I usually use 1/2 to 1 tablespoon each.
3 tablespoons brown sugar (to offset the acidity of the tomatoes)
1 sliced onion
1 tablespoon minced garlic
2-3 tablespoons tomato paste
1 can of diced tomatoes
6 cups beef broth, vegetable broth or water
4-5 yellow potatoes cut into bite sized pieces
3 carrots cut into bite sized cubes
1 can green beans
(You could also use mixed veggies)
Preparation:
-Season your beef and brown in a Dutch oven with olive oil.
-Remove beef from pan and a little more olive oil if needed to sauté the onions and garlic.
-Stir in your tomato paste and sauté for another 5 minutes.
-Add your beef back to the pot and add your can of diced tomatoes and stir.
-Pour in your broth and stir.
-Add your seasoning and 3 tablespoons of sugar and stir.
-Bring to a boil and allow to cook on medium for an hour or until beef is tender.
-Add veggies and allow to cook on medium low for an additional 30 minutes.
- Turn off heat and serve with your favorite additions or all by itself ❤️.
