Breakfast Sammich 🥪
Attempting to meal prep some things to freeze for when the baby is here and its been a struggle 🥴
Made these Ham egg and cheese English muffins and they looked so good I had to steal one for myself.
Also this pregnancy has been weird when it comes to food. Normally I hateeee runny eggs but I've been wanting one so bad and of course I can't have undercooked eggs 😫
Cooked this egg a little more and it was soooo good.
Ingredients
Canadian bacon or Ham (if there was any Taylor ham near me I would've used that)
Eggs
Salt/Pepper
Struggle slice cheese
English muffins
To freeze I assembled everything after cooking then let it all cool down. Then I wrapped each individual sandwich in parchment paper. Wrapped that in tin foil. Then I stuffed the sandwiches in a large freezer bag and dated it 3 months from now.
Okay, so you've got your delicious ham, egg, and cheese English muffin "sammiches" all prepped and in the freezer – amazing! I absolutely get the struggle of trying to get things ready, especially with a little one on the way. These breakfast sandwiches have truly been a lifesaver for me, making those hectic mornings so much smoother. But let's take your breakfast game up a notch with a few extra tips and variations to make sure every "sammich" is perfect and fits your cravings! First, let's talk about those eggs. The author mentioned preferring runny eggs but needing them cooked through during pregnancy, which is totally relatable! For the perfect breakfast sandwich egg, whether you like it fully set or just slightly jammy, an egg ring is your best friend. It helps create a perfectly round patty that fits beautifully on your English muffin. I usually crack an egg into a lightly greased egg ring on a non-stick pan over medium-low heat. Cook for about 2-3 minutes per side, or until your desired firmness. If you want a bit of a scramble, whisk your eggs first, then pour them into the ring. This ensures your egg is cooked through and safe, while still being super tender. The goal is a golden brown, fluffy egg that complements the melted cheese and savory ham. Now, while ham, egg, and cheese is a classic for a reason, don't be afraid to experiment! These "sammiches" are incredibly versatile. Craving something different? Sausage Patties: Cook up some homemade or store-bought sausage patties. They add a different savory depth. Crispy Bacon: Layer on a couple of strips of perfectly crispy bacon instead of ham. Veggie Boost: Sauté some finely diced bell peppers, spinach, or mushrooms and mix them into your scrambled eggs, or layer them onto the sandwich before adding the cheese. Cheese Please: While a good 'struggle slice' of American cheese melts beautifully, try sharp cheddar, provolone, or even a little pepper jack for a kick! Bread Swap: English muffins are fantastic, but you can also use bagels, croissants, or even biscuits for a different texture. Once your breakfast sandwiches are perfectly assembled and frozen, the next crucial step is reheating them so they taste just as good as fresh. No one wants a soggy "sammich"! Microwave (Quickest): This is my go-to when I'm short on time. Remove the foil and parchment paper. Wrap the sandwich loosely in a paper towel. Microwave on high for 1-2 minutes, flipping halfway, until heated through. Be careful not to overcook, or the egg can get rubbery. Oven/Toaster Oven (Crispiest): For that fresh-baked feel, unwrap your frozen sandwich and place it on a baking sheet. Bake at 350°F (175°C) for 25-30 minutes, or until warmed through and the muffin is slightly toasted and the cheese is beautifully melted. This method gives you a lovely golden brown exterior. Air Fryer (Best of Both Worlds): My personal favorite! Unwrap the sandwich and place it in the air fryer basket. Cook at 300°F (150°C) for 15-20 minutes, flipping once. You get the speed of the microwave with the crispiness of the oven – pure magic! Honestly, having a stash of these delightful breakfast sandwiches in the freezer has been a game-changer for my mornings. Whether you're navigating new parenthood, rushing out the door for work, or just want a convenient and satisfying meal, these homemade options beat store-bought any day. They're quick, customizable, and a fantastic way to ensure you start your day with something delicious and wholesome. Happy meal prepping!
