Easy Low Calorie Lunch! 🥪 🥗

Dupe Kale Crunch Salad:

Kale Salad Mix: Aldi

Light Italian Dressing: Aldi

Tyson Mediterranean Grilled Chicken Bites: Aldi

Golden Greek Sliced Pepperoncinis: Walmart

Dry Grated Parmesan Cheese: Walmart

I used the serving sizes for all ingredients, then put together, toss and enjoy! It doesn’t taste EXACTLY like the chic-Fil-a kale crunch salad but it’s a good alternative! I need to find the vinegarette chic-fil-a uses! (If you know what is it, help a girl out! 😁)

Mini Sandwich: Everything from Aldi

Hawaiian Roll

Turkey Deli Meat

Pepperoni Deli Slices

Light Mayo

Mustard

I put one slice of turkey, deli style pepperoni and then about 1tbs of mayo and a little bit of mustard. (It looks like a ton of mayo but the sandwich is small lol)

This is a perfect easy, summer go to lunch or dinner for me!

... Read moreIf you're looking to keep your lunches light yet satisfying, I've found that combining nutrient-rich salads with protein-packed mini sandwiches works wonders for me. For the kale crunch salad, using ingredients like kale salad mix, light Italian dressing, and grilled chicken bites adds flavor without unnecessary calories. Adding pepperoncinis and a sprinkle of dry grated parmesan cheese from Walmart gives it a nice tangy and savory kick, balancing the greens beautifully. One tip I've learned is to pay attention to the dressing quantity since many store-bought dressings can sneak in extra calories. I personally measured serving sizes to keep it low-calorie while still tasty. For those who love the Chic-fil-A kale crunch salad, a closer homemade version could be achieved by experimenting with vinegars and oil blends, maybe even adding a bit of apple cider vinegar or honey mustard for the signature tangy-sweet flavor. The mini Hawaiian roll sandwich is another gem for a quick low-calorie lunch. Using just one slice of turkey deli meat, some deli-style pepperoni, with light mayo and a bit of mustard on a soft Hawaiian roll makes a tasty combo. It's important to keep condiments light, as they can add up in calories quickly, especially mayo. I appreciate how small the sandwich is; it feels indulgent but still controls portion sizes effectively. What I like about these meals is how easy they are to assemble with simple ingredients from Aldi and Walmart, making healthy eating accessible for busy days. Plus, the balance of fresh veggies, lean proteins, and controlled fats really helps with weight maintenance and fat loss goals. Whether packed for work or a light dinner at home, these lunches keep me energized without feeling heavy or bloated. If you're on a calorie deficit or trying to lose weight, combining fresh salads with proteins and manageable portions of carbs like Hawaiian rolls is an efficient strategy. Feel free to customize ingredients based on dietary preferences; for instance, swapping turkey for chicken or using different veggies can keep meals exciting while sticking to your nutritional plan.
