I remember the first time I tasted authentic pozole; it was an instant love affair, and I've been perfecting my own recipe ever since.
Making pozole might seem a bit daunting at first, but trust me, it's totally worth the effort. The magic really happens during the simmering process. Prepare the Chili Sauce: While the pork is cooking, rehydrate your dried chiles in hot water. Once soft, blend them with fresh garlic, onion, and a bit of the pork cooking liquid until smooth. Strain this mixture to remove any tough skins or seeds – this is key for a silky sauce.
Combine and Simmer: In your large pot, sauté a little more onion and garlic, then add the chili sauce. Let it cook for a few minutes to deepen the flavor. Add the shredded pork back to the pot, along with the hominy and enough of the reserved pork broth to reach your desired consistency. Bring it to a boil, then reduce the heat and let it simmer for at least 30 minutes, or even longer. This is where the magic (and the aroma!) truly happens.
Serving Your Delicious Pozole:
This is my favorite part! Pozole is all about the toppings. I love arranging a spread of fresh ingredients so everyone can customize their bowl. My must-haves include:
