Pumpkin Streusel Cheesecake 🎃🍰

A layered cheesecake with a smooth pumpkin layer, creamy vanilla cheesecake base, and a crunchy buttery streusel topping.

You Will Need:

For the Crust:

1 ½ cups graham cracker crumbs

¼ cup melted butter

2 tbsp sugar

For the Cheesecake Layer:

16 oz (2 cups) cream cheese, softened

½ cup sugar

2 large eggs

1 tsp vanilla extract

For the Pumpkin Layer:

1 cup pumpkin puree

½ cup sugar

1 tsp cinnamon

½ tsp nutmeg

1 large egg

For the Streusel Topping:

½ cup flour

¼ cup cold butter

¼ cup brown sugar

½ tsp cinnamon

Instructions:

Prepare the Crust:

Preheat oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan. Set aside.

Make the Cheesecake Layer:

Beat the softened cream cheese with ½ cup sugar until smooth. Add eggs one at a time, beating after each addition. Stir in vanilla extract. Pour this cheesecake mixture over the prepared crust and smooth the top.

Make the Pumpkin Layer:

In a separate bowl, mix together pumpkin puree, ½ cup sugar, cinnamon, nutmeg, and egg until combined. Carefully spoon the pumpkin mixture over the cheesecake layer, spreading it evenly.

Prepare the Streusel Topping:

In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or pastry blender until the mixture resembles coarse crumbs. Sprinkle this streusel mixture generously over the top of the pumpkin layer.

Bake:

Place the cheesecake in the preheated oven and bake for 45-55 minutes or until the center is set but still slightly jiggly. The streusel should be golden brown on top.

Cool and Serve:

Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours (or overnight) before serving. Enjoy!

Thank you for sharing this pumpkin swizzle cheesecake. It looks really delicious and the recipe don’t look like it will take a long time to make or it doesn’t look like it’s hard to make either.
