How I Grill The Perfect Tomahawk Steak

Dry Brine is key. A few tsp of salt per pound of meat is all you need. Place uncovered on a baking rack in the fridge for 4-24 hours. This enhances flavors, promotes a better sear, and tenderizes the meat. Remove from fridge & pat dry when ready to cook.

Let the steak rest out of the fridge for 30 minutes then heavily season with salt & pepper. Don’t be afraid to over season, this is what the best steakhouses do all the time. Let rest for another 10 minutes before grilling.

Grilling Tips. Get coals ready! It’s key your coals have an orange glow and a small layer of ash, this means they are nice & hot. Preheat grill for 10 minutes, around 550 degrees is our goal. Sear each side until a crust has formed, around 2-3 minutes, once both sides have been seared, move it to the cooler section of the grates. Cover and adjust vents so temp drops on the grill to 350-400.
