Strip Steak & Chimichurri

1 New York Strip Steak

1 1/4 Tbsp Salt, Divided

2 Tsp Black Pepper

2 Tbsp Butter (if your steak doesn’t have enough beef fat to baste with)

1Tbsp Al Frugoni Chimichurri Mix

1 Tbsp Red Wine Vinegar

2 Tbsp Olive Oil

Pat steak dry and add 1/2 Tbsp (per pound of steak) of salt evenly around the steak. Place in the fridge uncovered, on a baking rack, for a minimum of 1 hour, up to 12. You can also skip this step if you don’t have time, if time allows though, do it!

Remove steak from fridge half hour before cooking and pat dry again. Season with salt and pepper. If the steak has a fat cap, I only season that with salt. Take a medium heat skillet / cast iron and sear the fat cap first, until color starts to form and fat renders, about 2-3 minutes. Now sear the steak for 3 minutes a side, then flip every minute until you reach your desired temp. Baste with butter or beef fat and allow to rest before slicing. Add chimichurri mix, rwv, let set for 2 minutes, then add in oil. This stuff is just as good as fresh, it’s mind blowing. Serve with steak and enjoy! #Steak #Wagyu #chimichurri #SteakDinner #Dinner
