1 1/2 - 2 lbs Bone In Short Ribs

1 1/2 Tbsp BBQ Rub of Choice

6 Oz Cream Cheese

1 Cup Pepper Jack Cheese

1/2 Cup Mozzarella

12 Manicotti Shells

12 Slices Bacon

2 Tbsp BBQ Sauce

Preheat smoker to 250 degrees. Heavily season short ribs, place on smoker (or oven), until they are prove tender with the thermometer, this will be near 200-205 degrees. Allow them to rest for 30 minutes before cutting. Cook manicotti shells until they are al dente, cool, and slice open. Mix meat with cream cheese, mozzarella, & pepper jack. Add around 1/4 cup of the mix to each shell, roll it up, and wrap with bacon. You can season with more bbq rub if you’d like. Smoke at 250 for 45 minutes, glaze with bbq sauce, then repeat glaze every 15 minutes until bacon is cooked, total time will be around 90 minutes.
