If you're looking for a unique twist on the classic baked potato, trying the Broccoli Cheddar Potato Pizza is a fantastic option. I recently made this recipe and found it incredibly easy to prepare, making it ideal for busy weeknights or casual lunches. The key is to use a large baking potato, which provides a sturdy base once smashed for that pizza-like feel. I recommend baking the potato in the oven or even microwaving it to speed up the process before placing it in an 8-10 inch cast iron skillet. Adding butter with salt and pepper enhances the potato’s natural flavors. The secret ingredient here is the sub sandwich dressing or white pizza sauce — it adds a creamy tangy layer that complements the cheddar cheese perfectly. I used sharp cheddar to get that bold cheesy flavor, alongside fresh broccoli that offers a nice crunch and nutritional boost. Feel free to swap the broccoli for other veggies like spinach or mushrooms for variety. After layering the ingredients and topping it with more cheese, baking at 400°F for about 10 minutes until the cheese melts creates a gooey, tasty crust. Once you take it out, letting it cool slightly helps it hold together better when sliced. I love topping mine with a drizzle of sriracha for a spicy kick or a dollop of sour cream to balance the heat and add creaminess. This meal is not only delicious but also packed with nutrients from the broccoli and potatoes. It’s a great way to enjoy comfort food without feeling guilty. Plus, it’s versatile enough to customize with your favorite toppings or sauces. Whether you want to serve it as a snack, appetizer, or light dinner, this Broccoli Cheddar Baked Potato Pizza is sure to please everyone at the table.
