Banana Chocolate Chip Muffins!
These a healthier muffin recipe sweetened with honey and the bananas only! They are so so good and you can add in other mix-ins like cinnamon or nuts!
Ingredients:
2 cups AP Flour
1 tbsp + 1 tsp baking powder
3/4-1cup mashed banana
1/2 cup milk of choice
3 tbsp honey (more if you like it sweet)
3/4 cup Greek yogurt
2 eggs, room temp.
3 tbsp butter, melted
1 tsp vanilla extract
1/4 tsp salt
1/2 cup mix-ins *optional*
Preheat oven to 375F
Line muffin pan with liners or grease well.
Mix wet ingredients in a small bowl.
In a separate large bowl, combine flour, salt, and baking powder, stir.
Add wet ingredients into dry. Fold to mix until almost combined, add in your mix-ins and fold until just combined. You do not want to overmix!
Evenly divide batter into muffin pan.
Bake for 18-22 minutes or until a toothpick comes out clean.
Let cool for a few minutes and then remove from pan to a wire rack to finish cooling.
