Blueberry Lemon Pastry Shells

I love puff pastry desserts because of how light and crispy they are! This lemon blueberry puff pastry is the perfect spring pastry! This is made with a homemade blueberry jam but you can also use a store bought one if you’d like. The combination of cream cheese with the sweet jam is delicious!! 🫐

Ingredients:

Jam:

2 cups blueberries

½ cup sugar

½ tbsp lemon juice

Combine all ingredients in a pot and cook over medium-low heat for 20 minutes until thickened

Cream cheese filling:

4 oz Cream cheese, softened

1 tsp Vanilla extract

1 tsp lemon juice

1 ½ tbsp sugar

Directions:

Preheat oven to 400F and line a baking sheet with parchment paper

Prepare puff pastry shells and place spaced out on baking sheet

In a separate bowl prepare the cream cheese filling. Mix cream cheese and sugar. Then stir in extract and lemon juice.

Gently add a tablespoon of cream cheese filling to each pastry shell, avoiding the edges.

Add a spoonful of blueberry jam on top of the cream cheese filling.

Bake for 14-16 minutes or until golden brown.
