Easy Spatchcock Chicken Recipe 🍗

Ingredients:

• 1 whole chicken (about 4-5 lbs), spatchcocked (backbone removed, flattened)

• 4 tbsp unsalted butter, softened

• 1 packet Sazón seasoning

• 1 tsp Cajun seasoning

• 1 tsp Complete seasoning

• 1 tsp paprika

• ½ tsp black pepper

• 1 tsp onion powder

• 1 tsp minced garlic (or 2-3 fresh garlic cloves, finely minced)

• 1 large onion, sliced

• 1 lemon, thinly sliced

• Fresh thyme and rosemary

Instructions:

1. Preheat the oven:

• Set the oven to 350°F (175°C).

2. Prepare the chicken:

• Rinse and pat the chicken dry with paper towels.

• Spatchcock the chicken by cutting along both sides of the backbone with kitchen shears. Flatten the chicken by pressing down on the breastbone until it lays flat.

3. Make the butter marinade:

• In a small bowl, mix the softened butter with Sazón, Cajun seasoning, Complete seasoning, paprika, black pepper, onion powder, and minced garlic.

4. Season the chicken:

• Gently loosen the skin over the breasts and thighs, being careful not to tear it.

• Spread about half of the butter mixture under the skin, directly onto the meat. Spread the remaining butter over the skin.

5. Prepare the pan:

• Arrange the sliced onion and lemon in a single layer on the bottom of a roasting pan. Add fresh thyme and rosemary if using.

• Place the spatchcocked chicken on top, skin side up.

6. Roast the chicken:

• Place the pan in the oven and roast at 350°F for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the thickest part of the chicken (thigh) reaches an internal temperature of 165°F.

7. Rest and serve:

• Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This helps retain its juices.

• Serve with the roasted onions and lemons for extra flavor.
