To be honest, as a working single parent, I always feel exhausted - but especially on a weekday. Maybe you know the feeling…
Sure, the routines are a little different right now in corona-land, but normally we need to be out the door by ~7am to drive her an hour to school then another hour to my office.
Sometimes in single parenthood, there are no good alternatives and you suck it up and do it.

Getting out the door on time has always been a challenge. We moved breakfast to the car when she was 3 or 4. Now, as you may know, it’s not the easiest to prepare a healthy meal for vehicle consumption. Fruit ✔️.
But what else can accompany it that is good tasting and filling and won’t result in syrup or butter splashes all over the seat? Yup. Eggs!

And, not sure about you, but I am so over hard-boiling eggs that never peel properly (sigh). Save yourself the headache and just grab some ready to eat greatdayfarms hard-boiled eggs at Walmart.
If I’m lucky, I will get a bite of hers in the car (like here) and I’ll always have a pack nearby to enjoy later in the day. Bon appetit.
