A Quick Healthy Farmer’s Market Salad
𝙰 𝚁𝚎𝚏𝚛𝚎𝚜𝚑𝚒𝚗𝚐 𝙵𝚊𝚛𝚖𝚎𝚛’𝚜 𝙼𝚊𝚛𝚔𝚎𝚝 𝚂𝚊𝚕𝚊𝚍 like this one is perfect for lunch. The tangy Italian dressing adds flavor to the bitter greens, the tomato adds sweetness and mozzarella balances everything out with some healthy fat and protein.
This is simply chopped romaine, arugula and tomatoes mixed with an Italian dressing topped with mozzarella. The dairy free Miyoko’s mozzarella is my favorite brand otherwise I make my own. Walnuts would be a great addition if you have them. I eyeballed the ingredients for the dressing that are listed below. For the most flavor use a high quality olive oil, freshly squeezed lemon juice and dried Italian dressing mix.
