Viral Spaghetti Squash with Boursin Cheese Recipe

The dairy free Boursin raw looks like an aioli but turns clear and gooey when melted in my opinion so it looks a bit different than traditional Boursin so something to keep in mind.
Ingredients:
- One large spaghetti squash
- 3 tbsps olive oil
- 10 oz. chopped cherry tomatoes
- One container Trader Joe’s Boursin cheese
- small bunch of basil
Step 1: Cut a medium sized spaghetti squash in half either long ways or short ways. You can also poke it and steam in the microwave first to make it easier to cut. Scrape the insides of the squash.
Step 2: Generously brush the inside of the squash with olive oil, then sprinkle with salt, add the tomatoes, then smash the Boursin cheese on top. Drizzle more olive oil on top.
Step 3: Bake in oven at 400 F for 45 minutes to one hour.
Step 4: You’ll know it’s ready if you test it by poking a fork through the squash that easily slides down. Use a fork to create perfect spaghetti squash noodles and mix everything together. Then rip the basil with your hands and add it in, mixing a bit more.
This is soooo luscious, it doesn’t taste healthy at all so you might like this even if you don’t think you’d like spaghetti squash.
