Food 52 reported this corn butter recipe was originally created by Whitney Wright in 2012. Corn has natural sugars that turn into starches once harvested which helps to explain how this recipe works. This recipe been went viral on social media a few years ago convincing me to try it.
Corn 🌽 is so versatile, it can be used to make many recipes using the raw kernels, fresh corn, masa and meal. Keep in mind this is isn’t like regular butter that can be used in baking, it’s really just a buttery spread.
🌽 Corn Butter (makes about 1 stick of butter) 🌽
Ingredients:
➡️ 2 cobs white corn
➡️ pinch salt
Step 1:
Shuck the corn and cut the corn off the cob using a sharp knife and grater. A grater will help you to get all the juice too. Grate the extra pieces and it with the liquid straight into the blender
Step 2:
Blend the corn into a very smooth buttermilk like consistency. If it’s struggling to blend add a little water.
Step 3:
Strain the liquid through a mesh strainer to remove the pulp. You will use the liquid for the butter.
Step 4:
Heat a saucepan to medium heat and whisk the liquid for 5 minutes until it thickens. It will thicken up as it cools.
Step 5:
Add a pinch of salt and mix into butter and allow to cool in the refrigerator before using. This is good for 5-7 days.
