fresh and tangy pickled onions

These homemade pickled onions are so addicting! They go great on almost everything. I especially like to eat them on rice for a fresh taste or avocado toast to break up the richness. Try them out and tell me what you think!

Ingredients:

🧅 1 small red onion

🧅 1-2 cloves of garlic (I prefer mine super garlicky)

🧅 1-2 bay leaves (optional)

🧅 a few peppercorns

🧅 2 tbs sugar

🧅 1/2 cup water

🧅 1 cup apple cider vinegar (or red wine vinegar)

Directions:

1️⃣ prepare all ingredients!

2️⃣ cut up onion. preferably as thin as possible.

3️⃣ add the onions in a glass pickling jar.

4️⃣ add all the other ingredients to a pot and bring to a boil.

5️⃣ once the mixture is to a boil, immediately pour everything into the glass jar.

6️⃣ put into your fridge overnight.

7️⃣ enjoy tomorrow for breakfast on avocado toast or for lunch or dinner! 😋

*these last in the fridge for up to 2 weeks*
