1- whole onion (diced)

1- whole green &red bell pepper (diced)

3-stocks of celery (diced)

1-pack of onion soup mix

Garlic powder

Onions powder

Black pepper

Adobe

Cajun seasoning if yours choice

Smoke meat of your choice

1-can of rotel tomatoes

minced garlic

Beef broth

Vegetables broth

3/4 vegetable oil

And little baking powder that’s optional he helps to soften the things up and reduce some of the gas in the beans. Because I used the Insta pot I cooked on high for 2 1/2 hours. Or until you’re beans are tender.

... Read moreHey fellow food lovers! I wanted to share a bit more about why this Cajun 15 Bean Soup is such a staple in my kitchen, especially as the weather cools down. You might be wondering, 'What exactly is 15 bean soup?' Well, it's typically a fantastic mix of various dried beans like navy, pinto, kidney, lima, and more, offering an incredible depth of flavor and texture that you just don't get with single-bean soups. Plus, it's naturally packed with protein and fiber, making it a super satisfying and healthy meal – perfect for keeping you full and energized without feeling heavy. It's truly a high-fiber powerhouse! While I absolutely adore my Instant Pot for its speed and convenience, I know many of you might prefer or only have a slow cooker or Crock Pot, and guess what? This recipe adapts beautifully! If you're going the slow cooker route for those amazing 'soup beans in crock pot,' here's how I do it: After sautéing your aromatics (onion, bell peppers, celery, minced garlic) briefly on the stovetop to build flavor (or just add them raw if you're in a hurry), combine everything – the soaked (or unsoaked, if you prefer, just add more liquid and cooking time) 15-bean mix, your diced vegetables, smoked meat, broth, Rotel, and all those wonderful Cajun seasonings – in your slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours, until the beans are perfectly tender. You'll want to add that little bit of baking soda about halfway through, just like with the Instant Pot, to help with softening and reducing any gassiness. The beauty of the slow cooker is letting those flavors meld all day long! Speaking of flavor, the 'smoke meat of your choice' really takes this soup to the next level. I often use a smoked ham hock or some diced smoked sausage, but don't be afraid to experiment! A little smoked turkey leg works wonders too, adding that deep, savory base that screams comfort. For those looking for a 'slow cooker bean soup vegetarian' version, you can absolutely make this without meat. Just omit the smoked meat and perhaps add a dash of liquid smoke or a generous amount of smoked paprika to get that smoky depth. You can also boost the umami with sautéed mushrooms or a bit of sun-dried tomato paste. And let's talk about seasonings! Beyond the traditional Cajun blend, I love adjusting the garlic powder, onion powder, and black pepper to taste. A pinch of cayenne can kick up the heat, and a bay leaf or two simmered with the beans adds another layer of aromatic goodness. Don't forget that Adobo – it's my secret weapon for an extra savory punch. Finally, you might be wondering what to serve with this hearty bowl of goodness. While some might ask 'what bread goes best with potato soup,' for this Cajun 15 Bean Soup, I find a crusty French bread, cornbread, or even some fluffy biscuits are absolutely divine for soaking up that rich broth. A simple side salad also makes it a complete and satisfying meal. Enjoy!
