Sourdough bread is not only delicious but also a fulfilling project for home bakers. The process begins with creating a sourdough starter, which can take about a week to develop properly. It's essential to feed your starter regularly to keep it active and ready for baking. The recipe outlined starts at 8:15 AM and includes a precise timeline for mixing and folding the dough. For instance, mix 100g of active starter with 350g of water until it looks milky. Next, incorporate 500g of flour and 10g of salt, mixing until you achieve a shaggy dough consistency. It's crucial to allow the dough to rest, covered with a damp towel, for optimal gluten development. As the day progresses, perform a series of stretch and folds, which aid in strengthening the dough structure. You can see the importance of timing as I document each step, culminating in a bulk fermentation period. The use of time stamps in this process is helpful, showcasing the commitment and love that goes into making your sourdough bread right at home.
