This is our version of Mille-Feuille Nabe which is a Japanese dish. Mille-Feuille means 1000 layers of leaves in French and nabe means pot in Japanese. Traditionally pork belly is used but we layer thinly sliced rib eye with napa cabbages and perilla leaves. We added shitake mushrooms, shimeji mushrooms and oyster mushrooms too. We use anchovy broth but you can use any broth you like.

Sauce: 2 part soy sauce, 1 part vinegar, 1 part water, Korean mustard to your liking. Can add sugar if you like it sweet.

While the original recipe for this specific Mille-Feuille Nabe calls for a delicious anchovy broth, which adds a fantastic depth, one of the best things about Nabe is how customizable the broth can be! If you're not a fan of anchovy, or simply want to try something different, consider a classic dashi broth made from kombu (kelp) and katsuobushi (bonito flakes) for a delicate, umami-rich base. A miso-based broth offers a savory, slightly sweet, and hearty flavor, perfect for colder days. Or, for a lighter touch, a simple chicken or vegetable broth works wonderfully too. Traditionally, it's served with various dipping sauces. The recipe's suggested sauce (soy sauce, vinegar, water, Korean mustard) is a fantastic start! I also love serving mine with a side of ponzu (citrus-soy sauce) or a dash of yuzu kosho (a spicy citrus paste) for an extra kick. And don't forget the 'shime' – the delightful Japanese tradition of adding noodles (like udon or ramen) or rice to the leftover broth at the end of the meal to soak up all the delicious flavors.
