Quick Tortilla Crepes (Single Serving)

Easy and delicious shortcut crepes using flour tortillas.

Ingredients:

3 medium flour tortillas (cut in halves to make 6 pieces)

1 egg

1 tablespoon plain Greek yogurt (or use milk)

1/4 teaspoon ground cinnamon

1 tablespoon water (optional, to thin the mixture)

Butter, for greasing the pan

Cream cheese, to spread between layers

Your favorite fruit preserves or jam

Powdered sugar, for topping

Fresh fruit or whipped cream, for serving (optional)

Instructions:

Make the dip mixture: In a shallow bowl, whisk together the egg, Greek yogurt (or milk), and cinnamon. Add a bit of water if the mixture is too thick for dipping.

Heat the pan: Butter a skillet or non-stick pan and set it over medium heat.

Dip & cook: Dip each tortilla half into the egg mixture, coating both sides. Place it in the pan and cook until lightly golden and bubbly on each side, about 1–2 minutes per side.

Layer & fill: As you cook the tortilla halves, layer them with cream cheese and a spoonful of your favorite preserves between each.

Top & serve: Stack the layers, dust with powdered sugar, and top with fresh fruit or whipped cream if desired.
