🍌 Brown Butter Chocolate Chip Banana Bread Coffee Cake

🧈 Streusel Topping

½ cup (100g) brown sugar

½ cup (60g) all-purpose flour

1 tsp cinnamon

Pinch of salt

4 tbsp (56g) cold unsalted butter, cubed

Method:

Mix brown sugar, flour, cinnamon & salt. Cut in cold butter using a fork or fingers until crumbly. Do NOT overmix. Chill in fridge.

🍰 Cake Batter

1½ cups (180g) all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tbsp cinnamon

½ cup (100g) brown sugar

¼ cup (50g) granulated sugar

½ cup (113g) salted butter, browned

1 egg

2 medium ripe bananas (mashed)

¼ cup (60g) sour cream or Greek yogurt

1 tbsp vanilla

½–1 cup mini chocolate chips (measure with your heart 😉)

🤎 Cinnamon Layer

¼ cup (50g) brown sugar

1–1½ tsp cinnamon

1 tbsp flour

Tiny pinch salt

Mix everything together.

1️⃣ Preheat oven to 350°F (175°C). Line an 8x8 pan with parchment paper.

2️⃣ Brown the butter: Melt butter on medium heat until golden brown and nutty. Let cool slightly.

3️⃣ In a bowl whisk flour, baking powder, baking soda, salt & cinnamon.

4️⃣ In another bowl mix browned butter, both sugars, egg, mashed bananas, sour cream & vanilla until smooth.

5️⃣ Add dry ingredients into wet. Mix JUST until combined. Fold in chocolate chips.

6️⃣ Spread half batter in pan (it will be thick).

7️⃣ Sprinkle cinnamon layer evenly.

8️⃣ Add remaining batter on top.

9️⃣ Top with chilled streusel + extra chocolate chips.

🔟 Bake 35–45 minutes until center is set and toothpick comes out clean.
