How I choose a kitchen knife 🔪
When I first got out of Culinary school I got caught up in buying the high end German and Japanese knives. But now my main concern is with sanitation. That’s why I only purchase knives that are one piece and one piece only. With one piece knives you can clean them and there is no way for germs to hide. But with a two piece construction that has an additional piece for a handle there is a good chance of germs and bacteria getting between the construction of the knife.
