So simple and so delicious. I roast the whole, unpeeled beets wrapped in foil, 400-450f for approximately an hour. Cool in foil, peel and cut.

*A lot easier to peel once cooked

Pairs well with Butter, Goat Cheese, Walnuts, Tarragon, Crisp Apples and Balsamic Vinegar
