Episode 2: Roux + An Egg

This is my favorite way to make mac and cheese because it has that creaminess but also reminds me of the “old school” way that I grew up loving. I’m not super picky when it comes to how it’s made because I’ve tried almost every version you can think of… but I will say any version that includes an egg tends to be my favorite. Regardless of my preferences, pass me whatever you make as long as it tastes right lol.

... Read moreMac and cheese is a timeless comfort food that many people cherish, and using a roux combined with an egg is a traditional technique that enhances its richness and creaminess. A roux, which is a cooked mixture of flour and fat (usually butter), serves as the base for thickening the cheese sauce, creating a smooth texture that's key to classic mac and cheese. Adding an egg not only contributes to the creaminess but also helps the sauce set slightly when baked, giving the dish a custard-like quality that’s both satisfying and nostalgic. This method has been passed down through generations because it strikes the perfect balance between creamy and firm. When preparing the roux, it's important to cook the flour long enough to remove the raw taste but not so long that it browns excessively, which could affect the color and flavor of the final dish. Slowly whisking in milk or cream after the roux is ready ensures a velvety béchamel sauce base. Incorporating an egg requires tempering: you want to beat the egg and slowly add some of the hot cheese sauce into it to raise its temperature without scrambling the egg. Then, mix the egg mixture back into the sauce to add richness and help bind the ingredients together. This recipe is quite versatile—practice and adjustments with seasoning and cheese types allow for customization. Common cheeses like sharp cheddar, Gruyère, or fontina can enhance the flavor profile, while adding a touch of mustard or nutmeg can deepen the taste. Baked or stovetop, mac and cheese made with a roux and egg consistently delivers that comforting, creamy mouthfeel many crave. Whether for holiday gatherings or an everyday meal, mastering this technique will elevate your mac and cheese to the next level.
