Holiday Breakfast Crostinis
Ingredients:
16 sliced French baguettes
½ tbsp Hellmann’s Mayonnaise
9 eggs
6 slices bacon
8 slices Colby Jack cheese, cut in half
½ cup shredded Colby Jack cheese
1 tbsp lightly dried chives
Salt and pepper to taste
Instructions
1.Preheat oven to 375°F.
2. Prepare bacon: Cook bacon until crispy, then chop into small bacon bits. Set aside.
3. Toast the baguettes: Spread a layer of Hellmann’s mayonnaise on each baguette slice. Place slices on the baking sheet and toast in the oven for 5–7 minutes, or until golden and lightly crisp.
4. Cook the eggs: In a bowl, whisk eggs with 1 tbsp of Hellmann’s Mayonnaise and a sprinkle of salt and pepper. Cook in a nonstick skillet over medium heat, gently scrambling until fluffy. Remove from heat.
