Making Honey BBQ Chicken Bites with Mac & Cheese is a rewarding experience that brings comfort and bold flavors to your table. When I first tried this recipe, I loved how the tender chicken bites marinated in a buttermilk and hot sauce wet batter created a tangy, juicy base. The seasoned dry coating with flour and cornstarch lends the perfect crispy texture when fried or baked. The mac and cheese sauce is the real star here — combining butter, minced garlic, and flour to create a roux, then slowly whisking in heavy cream, cream cheese, and evaporated milk delivers an ultra-smooth sauce. Mixing sharp cheddar, colby jack, and mozzarella cheeses adds depth and a gooey melt. Adding a dash of hot sauce to the sauce can kick up the flavor, though it’s optional. For best results, be sure to use cooked elbow macaroni and incorporate a bit of reserved pasta water to help the sauce cling beautifully to the noodles. Layering some cheese on top before baking at 350°F for 20 minutes, then broiling briefly, gives the mac and cheese a golden, bubbly crust that’s irresistible. Combining the coated chicken with a homemade honey BBQ sauce—made by melting butter, BBQ sauce, and honey together—adds a sticky, sweet glaze making each bite flavorful and satisfying. I find this dish perfect for holiday dinners, especially Thanksgiving, as it pairs the warmth of mac and cheese with the boldness of BBQ chicken. It’s also a crowd-pleaser for casual family meals or game day snacks. Don’t rush the baking step; it’s crucial for melding the cheeses and giving the dish an inviting finish. Try experimenting by adding your favorite spices or a touch of cayenne in the batter to adjust the heat level. This combo balances smoky, sweet, tangy, and creamy elements, making it a standout comfort food recipe worth keeping in your cooking repertoire.
