oooooomgggg these are the best holiday no-bake dessert. this easy recipe tastes like eating the best, chewy gingerbread cookie dough bites coated in a smooth layer of chocolate (the texture is cakey and insane). you are going to love this healthy holiday dessert!
Ingredients
1/2 cup creamy snickerdoodle almond butter - I love @grounduppdx (or sub creamy almond butter)
1/4 cup maple syrup
1 tsp vanilla extract
1 cup almond flour
1/4 tsp ground ginger
1/2 tsp allspice
1/2 tsp cinnamon
pinch salt
1/2 cup semi-sweet chocolate chips
2 tsp coconut oil
chopped pecans, for garnish
flaky salt for garnish
Method
In a medium bowl, cream together the almond butter, maple syrup, and vanilla extract until smooth. In a separate bowl, whisk together the almond flour, ginger, allspice, cinnamon, and salt. Combine the wet and dry ingredients until a sticky dough is achieved. Using about 1-2 tbsp of dough, form into truffles. Ttransfer the truffles to the freezer to firm up while you melt the chocolate. Melt the chips with coconut oil in the microwave in 15 second increments, stirring between each interval until smooth and glossy. Coat each truffle in the melted chocolate, ensuring fully coated, & transfer back to baking sheet. Garnish with chopped pecans and flaky salt. Place in freezer for 40 minutes to set.
