Made without any refined sugars or flours, you can make these cookies SO easily - and they’re absolutely delicious. I used @lilys_sweets Peanut Butter Flavor Baking Chips and Dark Chocolate Style Baking Chips (I’m obsessed with these and have been for years) which are so creamy and delicious, you’d have no idea there’s no added sugar in them. Ingredients
1 1/4 cup almond flour

3 tbsp coconut flour

1/3 cup creamy peanut butter

1/3 cup maple syrup

1/4 cup coconut oil

1 tsp baking soda

1 egg (can sub 2 flax eggs for vegan option)

1 tsp vanilla

1/4 tsp salt

1/4 cup LILY’S Peanut Butter Flavor Baking Chips

1/4 cup LILY’s Dark Chocolate Style Baking Chips

Method

Preheat oven to 350 degrees. Cream together peanut butter (i used crunchy but you can use creamy too!), beaten egg (can sub 2 flax eggs), melted and cooled coconut oil, maple syrup, and vanilla extract. in a separate bowl, whisk together almond flour, coconut flour, salt, and baking soda. Combine wet and dry ingredients. Now, fold in the baking chips. Form dough into 2-3 inch size amounts and place on parchment lined cookie sheet. Bake for 15-20 minutes, or until edges of cookies are golden brown. Let cool completely before enjoying.
