5. Purée: Use an immersion blender to purée the apple mixture until it is smooth and the desired consistency and return to the crockpot. Or transfer the mixture in batches to a blender to purée, then return it to the slow cooker.
6. Thicken: Cook the pureed mixture uncovered on high for 1–2 hours. This will allow excess moisture to evaporate and help the apple butter thicken. The apple butter is ready when it is dark in color and a spoonful mounds on a spoon. After it has thickened to your liking, add vanilla or vanilla bean and mix thoroughly.
7. Prepare for canning: Wash and rinse your canning jars and lids. Keep them hot until you are ready to fill them.
