Black pepper

Parsley

2 to 2 1/4 cups water

Instructions:

Put corned beef, onions, pepper, parsley, butter, water and carrots into slow cooker, cover and cook for 4 hours on high or 8 hours on low

Then add cabbage and cook another hour on high

From my experience, using 1 1/4 to 3 pounds of corned beef allows you to adjust the servings based on your needs, making it flexible for families or meal prepping. One tip is to ensure that the water added doesn’t cover the brisket completely; this helps preserve the beef’s texture and boosts flavor concentration. When it comes to vegetables like cabbage, carrots, and onion, adding them in stages, as detailed here, improves their texture. Cabbage especially can become too soft if cooked too long, so adding it for the last hour keeps it tender yet crisp. Seasoning is key—black pepper and fresh parsley elevate this traditional dish without overpowering it. I recommend tasting the broth before serving and adjusting seasoning if needed, perhaps adding a pinch of salt or a squeeze of fresh lemon juice to brighten the flavors. One serving being about 369 calories fits perfectly within a balanced 2000-calorie diet, especially if paired with a side like boiled potatoes or rye bread for a classic Irish touch. Butter adds richness but can be replaced with olive oil or left out to reduce fat content. This recipe's ease and hearty results made it a personal favorite, especially during colder months or when craving a comforting, homemade meal. Plus, it’s a great option for those looking to stick to calorie and macro goals without sacrificing taste or tradition. Slow cooker meals like this corned beef and cabbage are also great for busy days; you can prepare it in the morning and have a delicious dinner waiting when you return home. Lastly, corned beef and cabbage is not only delightful but also a source of protein, vitamins from the cabbage and carrots, and minerals, making it a nutritious option within a balanced diet. Whether you’re pregnant, like the author, or simply craving something hearty and nourishing, this recipe is a winner.
