So you've seen my amazing Loaded Oven Potatoes recipe, which uses delicious potato wedges. But sometimes, I get asked about other ways to prepare potatoes for a hearty oven-baked meal, especially about using 'medium diced potatoes'. And you know what? That's a fantastic idea! Using medium-diced potatoes can totally change the texture and how the flavors blend in a dish like this, making it even more versatile. Why go for medium diced? Well, for starters, they cook more evenly and often get crispier all around because of the increased surface area. Plus, they mix beautifully with other ingredients like our tender 'cubed chicken' and vibrant 'broccoli florets', ensuring every bite is a perfect medley of flavors. It’s all about getting that perfect bite of savory goodness! If you're wondering how to get those perfect 'medium dice' potatoes, it's really quite simple. First, make sure you've cleaned your white potatoes thoroughly. Then, slice each potato lengthwise into thick planks, about ½ to ¾ inch thick. Next, stack a few planks (if they're stable) and slice them into long sticks, maintaining that ½ to ¾ inch thickness. Finally, turn your sticks 90 degrees and cut them crosswise into cubes of the same size. You want them to be roughly consistent so they all cook at the same rate. This technique works wonders for consistent 'oven-roasted' results. Now, how do you adapt our 'Loaded Oven Potatoes' recipe for these lovely diced potatoes? It's super easy! Instead of cutting your potatoes into wedges, simply follow the dicing steps above. When it comes to roasting, the cooking time might be slightly shorter than for wedges, perhaps 25-30 minutes at 400 degrees F, or until fork-tender and beautifully golden brown. You'll still want to give them a good toss with your chosen seasonings – don't skimp on the Cajun seasoning, garlic powder, and onion powder for that irresistible flavor! And don't forget that little trick of adding butter and broiling for 5 minutes at the end for extra crispiness before adding your 'cubed chicken', 'broccoli florets', and 'melted shredded cheese'. Here are a few extra tips for roasting your medium-diced potatoes to perfection: Soak & Dry: For extra crispiness, you can soak your diced potatoes in cold water for 15-30 minutes to remove excess starch. Make sure to pat them completely dry before seasoning and roasting – moisture is the enemy of crispiness! Don't Crowd the Pan: This is crucial! Spread your diced potatoes in a single layer on your baking sheet. If they're too crowded, they'll steam instead of roast, leading to soggy results. Use two baking sheets if necessary. Oil Them Well: A good coating of olive oil ensures even browning and crispiness. Toss Halfway: Give your potatoes a good toss about halfway through the roasting time to ensure all sides get that lovely golden crust. Using medium-diced potatoes in this 'Loaded Oven Potatoes' recipe makes it a truly versatile dish. Whether you stick with the classic 'oven-roasted potato wedges' or go for uniform cubes, you're guaranteed a 'savory' and satisfying meal. It’s a game-changer for busy weeknights and a crowd-pleaser every time!

Made this last night! It was delicious!
