As someone who’s always looking to eat more plant based, I was stoked to find their Boulder Vegan burrito ($10), featuring seasoned potatoes, tofu scramble, and that Colorado-style green chili. Seriously so good!

My husband Austin went for the Federal Chorizo ($10), and trust me, he wasn’t disappointed. The Mexican-style chorizo paired with seasoned potatoes, scrambled eggs, cheese, and the same tasty green chili was absolute perfection!

And I can’t forget the house-made guasacaca that’s served with every burrito —a tangy guacamole sauce inspired by Chef Ashley’s husband’s Venezuelan roots. Seriously, you’ll want to dip every bite in it.
