This was one of those nights where we knew we had to cook it before it goes bad and it was totally unplanned and he surprised me with something different. It was so dang good. Rice pilaf maybe wasn’t the best rice pairing but it was a “gotta go grocery shopping” kinda day too. Same for the corn lol.
Seafood is a fantastic choice when looking for healthy and delicious dinner ideas. Beyond the dishes highlighted, consider incorporating a variety of seafood options into your weeknight meals. For instance, shrimp stir-fries are quick and can be paired with vegetables like bell peppers and snap peas, making them nutritious and vibrant. You can also marinate fish fillets in herbs or citrus before grilling to enhance their flavor and keep them moisture-rich. Another option is to feature a seafood pasta with clams or mussels, tossed in a light garlic and white wine sauce. Using whole grain pasta can further boost the nutritional value. Additionally, don’t overlook the versatility of canned seafood; options like tuna or sardines can be used to create quick salad meals or served over whole-grain toast for a light yet fulfilling dinner. For sides, consider roasted vegetables or a fresh garden salad to complement your seafood choices. Adding legumes like lentils or chickpeas can also provide extra proteins, rounding out your meals beautifully. Embracing these ideas ensures a diverse and appetizing seafood repertoire that is both gourmet and approachable!
